Recipe: Roasted Winter Vegetable Soup

This simple soup makes the most of seasonal root veggies and squash, turning them into a creamy, deeply flavored dish.

Ingredients:

  • 2 carrots, peeled and chopped

  • 1 sweet potato, diced

  • ½ butternut squash, peeled and cubed

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 tsp dried thyme

  • ½ tsp smoked paprika

  • Salt & pepper to taste

  • Olive oil

Instructions:

  1. Toss the carrots, sweet potato, and butternut squash in olive oil, salt, and pepper. Roast at 400°F (200°C) for 25–30 minutes until caramelized.

  2. In a pot, sauté onions and garlic until softened. Add the roasted vegetables, broth, thyme, and paprika. Simmer for 10 minutes.

  3. Blend until smooth and adjust seasoning. Serve with crusty bread or a swirl of cream.

Ingredients:

  • 2 lbs ground beef or turkey

  • 1 large onion, diced

  • 2 jalapeños, diced

  • 1 red bell pepper, diced

  • 5 cloves garlic, minced

  • 1 can (15 oz) crushed tomatoes

  • 1 can (15 oz) diced tomatoes with green chilies (I like Rotel)

  • 1 can (15 oz) black beans, drained & rinsed

  • 1 can (15 oz) kidney beans, drained & rinsed

  • 1 tbsp tomato paste

  • ½ beer of choice

  • 2 cups beef or veggie broth

  • 1.5 tbsp chili powder

  • 2 tsp cumin

  • 1 tsp smoked paprika

  • Salt & pepper to taste

Instructions:

  1. Brown the ground beef (or turkey) in a large pot. Add the onions and cook until soft.

  2. Season the beef and onions, then add garlic, jalapeños, and bell pepper.

  3. Stir in tomato paste, chili powder, cumin, paprika, salt, and pepper. Sauté until fragrant.

  4. Pour in beer to deglaze the pan, scraping up any browned bits.

  5. Add crushed tomatoes, diced tomatoes, beans, and broth. Bring to a simmer and cook for 30–40 minutes.

  6. Taste and adjust seasoning, then serve hot!

  3. While the chicken roasts, sauté chopped kale or collards in a bit of the pan drippings with garlic until wilted.
